Local sources, organic products, our farm

"There is no trifling with nature, it is always true..."(Johann Wolfgang von Goethe)

Whatever we cannot grow or produce ourselves,
we source from the surrounding area: fruit and vegetables from our local greengrocer,
or cheese straight from a producer in the mountain farms.

“Mountain herbs and spices add a special touch to our dishes.” Rosa, senior chef

In the three gardens of our hotel, aromatic herbs, fruits and vegetables grow and ripen in the sun, carefully tended by our senior chefs Rosa and Franz Josef. There are different varieties of lettuce, courgettes, various types of pumpkin and cabbage, strawberries, red currants, plums, and aromatic herbs such as basil, mint, rosemary and juniper - and much more besides.

"We love South Tyrolean cuisine. We combine traditional dishes
with Mediterranean touches. A real delight!"
Reinhold, junior chef

Nothing is left to chance at the Sonnenhotel Adler, at least not when it comes to the quality of our food. We have our own small businesses - a bakery, pastry shop and butcher's - which supply us with high-quality products, all typical of the local area. These include fresh bread, pasta, jams and cakes, cold meats such as Kaminwurzen (smoked South Tyrolean salami, gluten- and lactose-free), Schlutzkrapfen (Tyrolean ravioli) and many types of homemade dumpling. Our high quality, all-organic meat comes from the pigs and Scottish Highland cattle we raise outdoors near our sister hotel, the Untertheimerhof, under the careful supervision of senior chef, Franz Josef.
